How to Make Dan Dan Noodles - A Spark of Madness Style

Going through her recipe book Spark of Madness we can say Simran Savlani got some bomb recipes that will hit the spot all year round, not only that but she also has come up with some scrumptious jams (with alcohol!) and sauces to make everything from salads to cocktails. 
 
We can honestly say she doesn't have to twist our arms to make us try anything she makes. Her sauces will become staples an any meal time.



As a little gift for the holidays, Simran has given us this recipe to upgrade your noodle game and awe everyone in your next gatherings or just please the foodie in you after a long day.

Dan Dan noodles - Spark of Madness - bookazine

Dan Dan Noodles with Spark Sauces

Ingredients:

100g Dry Ribbon Noodles
20g Pak Choy
2-3 Garlic Cloves
100g Minced Mock Meat/Tofu
1.5 cups Vegetable Stock
1 Spring Onion
2 Tbsp Crushed Peanuts
Spark Crispy Chili Oil
Spark Caramelized Spring Onion
Spark Crack Sauce

Instructions:
-In a pot of salted boiling water cook the noodles for 5 minutes.
-Add the pak choy leaves and cook for 30 seconds.
-Scoop the pak choy out and keep aside.
-In a pan, add a splash of oil and minced garlic.
-Add the minced mock meat and stir-fry.
-Next add a tbsp each of Spark Crispy Chili Oil and Spark Caramelized Spring Onion.
-Mix well together and keep aside.
-In a pan, add a few table spoons of Spark Crack Sauce.
-Cook for a minute then add 1.5 cups of vegetable stock.
-Let it come to a boil and then add in your parboiled noodles. Mix well together.
-Assemble the noodles in a bowl. Add the minced mock meat to one side.
-Place the pak choy next to it. Sprinkle crushed peanuts and spring onion.
-Drizzle Chili Oil and Bon Appetit!
